Heirloom - Annual 42 Days • Component of the French “Fines Herbes” along with chives, tarragon, parsley and sometimes marjoram • A warm and delicate herb best used fresh and cooked lightly • Does not dry well, but is often preserved in vinegar • Leaves will purple as they mature, young green leaves are more potent • Part of the carrot family • Fernleaf structure resembles carrot tops • Smells similar to Anise • Considered a “cheering” herb, and is used in light sauces, on fish and chicken, and fresh in salads as in the traditional Mesclun mix
