Heirloom – Late 1800's

  • 91 Days, 5" pods
  • A Midwest favorite, native to the midwest
  • Discovered in the late 1800’s by a seed catalog company, it was being grown by the Mandan Indians of the Dakotas
  • This is a tender white bean that cooks more quickly than the Navy Bean
  • Low in calories and high in iron, magnesium, and folate
  • Feature in baked beans, or use in any soup or stew where you want the bean to pick up and meld the flavors
  • Thought by many to be the best bean for ham and beans
  • High yield plant grows well in cooler climates

  • 60 days, 5" pods
  • This is a multi-purpose bean
  • Early in the season they produce a light green bean that is suitable for snap bean preparation
  • Let the pods mature more fully, and when the pod has turned cream colored, watch for the first appearance of bright pink splashes
  • When the pink starts your beans are at the perfect stage for shelly beans, or to prepare in succotash
  • Let them completely mature until there is more pink than cream and when the seeds rattle you can harvest as a normal dry bean
  • Attractive, cream colored with bright pink splashes
  • Will cure to a deeper tan color, but color splotching will remain pink

Dark Red Kidney

Heirloom – Undated

  • 95 Days, 5" pods
  • Large red bean used in many Mexican, Caribbean, Texan and Creole dishes
  • Very popular due to how easy they grow, harvest, and process
  • High in folate, dietary fiber, protein, thiamin-B1, phosporus, iron, copper, magnesium, manganese, potassium, and Vit K
  • In late summer bean pods will begin to dry
  • When you can hear beans rattle inside pick, pop and sort, then store in air tight container
  • Harvest as they mature so early pods do not get wet and go bad waiting for the later pods
  • Always boil unprocessed Kidney Beans for at least 10 minutes then change water to ensure the lectins have been released
  • Do not eat raw and only use beans you have canned or precooked in the crock pot
Pinto III

Heirloom – Undated

  • 85 Days, 4.5" pods
  • A southern soup bean
  • High in fiber, protein and nutrients
  • Easy to grow and store
  • Many regional recipes call for pinto beans like refried beans, chili, Pinto bean soup, taco soup, or simply made up with garlic and onion and served with cornbread over rice
  • A must have in many Southern pantries
  • Preferred over the Great Northern Bean in the southern regions for ham and beans
